Life is crazy busy right now, so I've got to keep it short. In a nutshell: I love pancakes, I love apple, and oooh do I love cardamom. So I put 'em all together and I must say, this recipe really works. Little chunks of apple in fluffy, buttery pancakes, scented with lemony spicy cardamom... nom nom.
I love opening the papery green cardamom pods, and smooshing their seeds with a mortar and pestle. It makes the kitchen smell divine, and makes me feel like I've accomplished something kind of impressive.
As Tom Hanks said, "I... have created... fresh ground cardamom!" Well, maybe that isn't exactly how it went.
Anyway... want the recipe? Here it is.
Cardamom Apple Pancakes
Adapted from Veronica's Apple Pancakes recipe on Allrecipes.comIngredients
- 1 cup apple, diced small (tart is best, like Granny Smith)
- 1 1/4 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1 tablespoon white sugar
- 1/2 teaspoon fresh ground cardamom
- 1/4 cup butter, melted
- 1 egg
- 1 cup milk
- 1/2 teaspoon vanilla
Directions
- In a large bowl, mix together the flour, baking powder, white sugar, and cardamom.
- In a medium bowl, beat together the melted butter, egg, milk, and vanilla.
- Pour the wet ingredients into the dry, stirring just until incorporated.
- Stir in the apples; don't overstir.
- Heat a griddle or frying pan to medium-low, and add a tablespoon or so of butter.
- Pour pancake batter in 1/3 to 1/2 cup measures.
- Cook until bubbles form on the top of the pancake, and the bottom is golden.
- Flip and cook on the other side until golden.
- Serve with butter and maple syrup. And enjoy!
